Ingredients:
- 600g of sushi-grade Ahi tuna, diced
- 2 cups of sushi rice
- 4 cups of water
- 1/4 cup of soy sauce
- 2 tablespoons of sesame oil
- 1 avocado, sliced
- 1 cucumber, thinly sliced
- 1/4 cup of chopped scallions
- 1 tablespoon of sesame seeds
- 1 teaspoon of wasabi (optional)
- Seaweed salad for garnish

Instructions:
- Rinse the sushi rice under cold water until the water runs clear. Add the rice and water to the rice cooker and cook according to the manufacturer's instructions. Once cooked, let it cool.
- In a mixing bowl, combine the diced Ahi tuna, soy sauce, sesame oil, chopped scallions, and wasabi (if using). Mix well and set aside to marinate for about 10 minutes.
- Once the rice is cooled, divide it into four serving bowls as the base.
- Top each bowl with the marinated Ahi tuna, sliced avocado, cucumber, and a sprinkle of sesame seeds.
- Garnish with seaweed salad and extra scallions as desired. Serve immediately and enjoy your poke bowl!
