Creamy yellow split pea soup studded with bits of ham, carrots, celery, and thyme. There is nothing like this soup on a cold day! I am a Canadian now living in the United States and cannot get Habitant soup anymore, so I came up with this version. I think it is as good as the real thing, if not better because it is homemade.

Ingredients:
- 500g of yellow split peas
- 1L of chicken broth
- 200g of smoked ham, diced
- 2 medium onions, chopped
- 3 cloves of garlic, minced
- 2 large carrots, diced
- 2 stalks of celery, diced
- 2 bay leaves
- 1 tsp of dried thyme
- Salt to taste
- Pepper to taste
- 2 tbsp of olive oil
Kitchen Tools Needed:
- Large pot
- Blender
- Wooden spoon
- Knife
- Cutting board
Instructions:
- Rinse the split peas under cold water and set aside.
- In a large pot, heat the olive oil over medium heat. Add the chopped onions, garlic, carrots, and celery. Sauté until vegetables are softened and onions are translucent.
- Add the diced ham and cook for an additional 5 minutes, stirring frequently.
- Stir in the yellow split peas, chicken broth, bay leaves, and dried thyme. Bring the mixture to a boil.
- Reduce the heat to low and cover the pot. Simmer for about 90 minutes, or until the split peas are tender and starting to break apart.
- Remove the bay leaves. Use an immersion blender to puree the soup to your desired consistency.
- Season with salt and pepper to taste. Serve hot.
