Ingredients:
- 4 large flour tortillas
- 8 large eggs
- 200g of black beans, drained and rinsed
- 150g of cheddar cheese, shredded
- 100g of bell peppers, diced
- 100g of onions, diced
- 2 tbsp of olive oil
- 1 tsp of cumin
- 1 tsp of paprika
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
- Salsa for serving (optional)
Kitchen Tools Needed:
- Skillet
- Spatula
- Mixing Bowl
- Knife
- Cutting Board
- Aluminum Foil
Instructions:
- Heat the olive oil in a skillet over medium heat.
- Add the diced onions and bell peppers, sauté until softened, about 5-7 minutes.
- In a mixing bowl, whisk together the eggs, cumin, paprika, salt, and pepper.
- Pour the egg mixture into the skillet, stirring gently until the eggs are fully cooked.
- Add the drained black beans and half of the shredded cheddar cheese to the skillet, mixing until combined and heated through.
- Warm the flour tortillas in a separate skillet or microwave until soft.
- Lay each tortilla flat and spoon the egg mixture onto the center of each tortilla.
- Sprinkle the remaining cheddar cheese on top and roll the tortillas tightly to form burritos.
- Wrap each burrito in aluminum foil to keep warm and cut in half for serving.
- Garnish with fresh cilantro and serve with salsa on the side.
