Breakfast Burrito


 

Preparation Time:

Ingredients:

  • 4 large flour tortillas
  • 8 large eggs
  • 200g of black beans, drained and rinsed
  • 150g of cheddar cheese, shredded
  • 100g of bell peppers, diced
  • 100g of onions, diced
  • 2 tbsp of olive oil
  • 1 tsp of cumin
  • 1 tsp of paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)
  • Salsa for serving (optional)

Kitchen Tools Needed:

  • Skillet
  • Spatula
  • Mixing Bowl
  • Knife
  • Cutting Board
  • Aluminum Foil

Instructions:

  • Heat the olive oil in a skillet over medium heat.
  • Add the diced onions and bell peppers, sauté until softened, about 5-7 minutes.
  • In a mixing bowl, whisk together the eggs, cumin, paprika, salt, and pepper.
  • Pour the egg mixture into the skillet, stirring gently until the eggs are fully cooked.
  • Add the drained black beans and half of the shredded cheddar cheese to the skillet, mixing until combined and heated through.
  • Warm the flour tortillas in a separate skillet or microwave until soft.
  • Lay each tortilla flat and spoon the egg mixture onto the center of each tortilla.
  • Sprinkle the remaining cheddar cheese on top and roll the tortillas tightly to form burritos.
  • Wrap each burrito in aluminum foil to keep warm and cut in half for serving.
  • Garnish with fresh cilantro and serve with salsa on the side.
