Ingredients:
- 800g of baby potatoes
- 3 tablespoons of Cajun seasoning
- 100g of mayonnaise
- 50g of sour cream
- 1 tablespoon of Dijon mustard
- 1 small red onion, finely chopped
- 100g of celery, diced
- 1 bell pepper, diced
- 3 tablespoons of fresh parsley, chopped
- Salt to taste
- Pepper to taste
- 1 tablespoon of olive oil

Instructions:
- Wash the baby potatoes and place them in a large pot. Cover with salted water and bring to a boil.
- Once boiling, reduce heat and simmer for 15-20 minutes or until tender. Drain and let them cool slightly.
- In a mixing bowl, combine the mayonnaise, sour cream, Dijon mustard, Cajun seasoning, olive oil, salt, and pepper. Whisk together until smooth.
- Cut the cooled potatoes into halves or quarters, depending on size, and add them to the bowl with the dressing.
- Add the chopped red onion, diced celery, and bell pepper to the bowl and gently mix everything together until well coated.
- Sprinkle the fresh parsley on top and adjust seasoning if necessary, before serving.
