Ingredients:
- 200g of wild rice
- 1 medium red onion, finely chopped
- 150g of cranberries, dried
- 100g of pecans, chopped
- 150g of feta cheese, crumbled
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 30ml of olive oil
- 30ml of balsamic vinegar
- Salt to taste
- Pepper to taste
- Fresh parsley for garnish

Instructions:
- Rinse the wild rice under cold water and combine it with 600ml of water in a large pot.
- Bring the water to a boil, then reduce the heat and simmer for about 25 minutes or until the rice is tender.
- Once cooked, drain the wild rice in a colander and let it cool.
- In a large mixing bowl, combine the cooled wild rice, red onion, cranberries, pecans, feta cheese, and bell peppers.
- In a separate small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper to create the dressing.
- Pour the dressing over the salad and mix gently until everything is well combined.
- Garnish with fresh parsley before serving.
