Northwoods Wild Rice Salad


Preparation Time:

Ingredients:

  • 200g of wild rice
  • 1 medium red onion, finely chopped
  • 150g of cranberries, dried
  • 100g of pecans, chopped
  • 150g of feta cheese, crumbled
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 30ml of olive oil
  • 30ml of balsamic vinegar
  • Salt to taste
  • Pepper to taste
  • Fresh parsley for garnish

Kitchen Tools Needed:

  • Colander
  • Mixing Bowl

  • Knife
  • Cutting Board

Instructions:

  • Rinse the wild rice under cold water and combine it with 600ml of water in a large pot.
  • Bring the water to a boil, then reduce the heat and simmer for about 25 minutes or until the rice is tender.
  • Once cooked, drain the wild rice in a colander and let it cool.
  • In a large mixing bowl, combine the cooled wild rice, red onion, cranberries, pecans, feta cheese, and bell peppers.
  • In a separate small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper to create the dressing.
  • Pour the dressing over the salad and mix gently until everything is well combined.
  • Garnish with fresh parsley before serving.
