  • 200g of black beans, drained and rinsed
  • 1 cup of cooked white rice
  • 200g of shredded cheese (cheddar or Mexican blend)
  • 1 medium onion, diced
  • 2 cloves of garlic, minced
  • 1 red bell pepper, diced
  • 1 tablespoon of olive oil
  • 1 tablespoon of taco seasoning
  • 1 teaspoon of cumin
  • 1 teaspoon of paprika
  • 4 large flour tortillas
  • Salt and pepper, to taste
  • Sour cream, for serving
  • Salsa, for serving
  • Guacamole, for serving

Kitchen Tools Needed:

  • Large skillet
  • Cutting board
  • Sharp knife
  • Measuring cups
  • Mixing bowl
  • Aluminum foil

Instructions:

  • Heat the olive oil in a large skillet over medium heat. Add the diced onion, bell pepper, and minced garlic. Sauté until the vegetables are soft.
  • Add the ground beef to the skillet. Cook until browned, breaking it up with a spatula, about 5-7 minutes.
  • Stir in the taco seasoning, cumin, paprika, salt, and pepper. Mix well to combine. Cook for an additional 2 minutes.
  • Add the black beans and cooked rice to the beef mixture. Stir until heated through and well combined. Remove from heat.
  • Lay out the flour tortillas on a clean surface. Divide the beef mixture evenly among the tortillas, placing it in the center of each one.
  • Top with shredded cheese, and then fold in the sides of the tortilla and roll it up tightly from the bottom to create a burrito.
  • Wrap each burrito in aluminum foil, keeping them warm as you prepare to serve.
  • Serve each burrito with a side of sour cream, salsa, and guacamole.
