Cranberry Granita Delight

Preparation Time:

  • 60 min

Ingredients:

  • 500g of fresh cranberries
  • 300g of sugar
  • 200ml of water
  • 1 teaspoon of lemon juice
  • 1 sprig of mint for garnish

Kitchen Tools Needed:

  • Ice cream maker
  • Blender
  • Mixing bowl
  • Spatula
  • Serving glasses

Instructions:

  • Rinse cranberries under cold water and remove any stems or damaged berries.
  • In a saucepan, combine water and sugar over medium heat, stirring until sugar dissolves completely.
  • Add cranberries to the saucepan and bring to a boil. Reduce heat and simmer for about 10 minutes until cranberries burst and release their juices.
  • Remove from heat and let the mixture cool slightly before transferring to a blender.
  • Blend the cranberry mixture until smooth, then strain it through a fine mesh sieve into a mixing bowl to remove the skins.
  • Stir in lemon juice and adjust sweetness if necessary.
  • Pour the cranberry mixture into an ice cream maker and churn until fluffy and frozen, according to your machine's instructions.
  • Transfer the granita to a shallow dish and freeze for at least 30 minutes to set completely.
  • Before serving, use a fork to scrape the surface of the granita to create fluffy flakes. Serve in chilled glasses and garnish with mint sprig.
