Southwestern Pork Salad

Ingredients:

  • 300g of pork tenderloin
  • 2 tablespoons of olive oil
  • 1 teaspoon of cumin
  • 1 teaspoon of chili powder
  • 1 teaspoon of garlic powder
  • Salt to taste
  • Pepper to taste
  • 4 cups of mixed greens
  • 1 cup of cherry tomatoes, halved
  • 1 avocado, diced
  • 1/2 cup of sweet corn
  • 1/2 cup of black beans, rinsed and drained
  • 1/4 cup of fresh cilantro, chopped
  • Juice of 1 lime
  • 1/4 cup of feta cheese, crumbled

Instructions:

  • Preheat the grill to medium-high heat.
  • Rub the pork tenderloin with olive oil, cumin, chili powder, garlic powder, salt, and pepper.
  • Grill the pork for about 25 minutes or until the internal temperature reaches 145°F (63°C), turning occasionally to ensure even cooking.
  • Remove from the grill and let it rest for 5 minutes before slicing.
  • In a large mixing bowl, combine the mixed greens, cherry tomatoes, avocado, corn, black beans, and cilantro.
  • Slice the grilled pork and add it to the salad.
  • Drizzle with lime juice and toss gently to combine.
  • Top with crumbled feta cheese before serving.
