Grilled Pineapple Chicken Kabobs


Preparation Time:

Ingredients:

  • 600g of chicken breast, diced
  • 1 medium pineapple, peeled and cut into chunks
  • 2 bell peppers (one red and one yellow), cut into chunks
  • 1 medium red onion, cut into chunks
  • 3 tablespoons of olive oil
  • 2 tablespoons of soy sauce
  • 1 tablespoon of honey
  • 1 tablespoon of lime juice
  • 1 teaspoon of garlic powder
  • 1 teaspoon of paprika
  • Salt and pepper to taste

Kitchen Tools Needed:

  • skewers
  • mixing bowl

  • cutting board

Instructions:

  • In a mixing bowl, combine olive oil, soy sauce, honey, lime juice, garlic powder, paprika, salt, and pepper to create a marinade.
  • Add the diced chicken breast to the marinade and let it sit for at least 15 minutes.
  • While the chicken is marinating, soak the skewers in water for about 10 minutes if using wooden ones.
  • Preheat the grill to medium heat.
  • Thread the marinated chicken, pineapple chunks, bell peppers, and red onion onto the skewers, alternating the ingredients as desired.
  • Place the kabobs on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  • Serve hot, garnished with fresh herbs or a drizzle of the remaining marinade.
